2 Table Spoons Corn Oil
1 TeaSpoon Salt
2-3 Pieces Whole Cardamom
2-3 Pieces Pay Leaves
Shrimp mixture:
1/2 Teaspoon Saffron
2 TableSpoons Corn Oil
2 Large Onion , chopped
3-4 Cloves Ginger , chopped
1 TeaSpoon Garlic , crushed
750 Grams Shrimpd , peeled
2 TeaSpoon Salt
1 1/2 TeaSpoon Fish spices
1/2 TeaSpoon Ground Cardamom
1/2 TeaSpoon Black Pepper
1/2 TeaSpoon Cinnamon
1/2 Cup Parsley , chopped
Methods :
1. Wash rice. Keep aside. Soak saffron in ¼ cup of warm water. Keep aside.
2. In a medium casserole boil 2 liters of water; add oil, salt, cardamom, bay leaves. Add rice; boil for 15 – 20 minutes until rice is almost cooked. Strain.
3. Put oil and onion in a medium casserole, cook until golden. Add garlic and ginger, and cook for 1 minute.
4. Add shrimps, spices, salt, pepper, cardamom and cinnamon. Leave on medium heat for 10 minutes until shrimp is tender.
5. Strain rice and add to the shrimp mixture, stir carefully.
6. Cover the casserole tightly; simmer for 20 – 30 until rice is completely cooked. Sprinkle with parsley.
